Restaurant cooking equipment emissions are generally contaminated with vaporized grease and other fuels that can ignite a potential fire. Below you will find an actual fire system design for an exhaust hood that included an electrostatic precipitator (a filtration system which uses electrically charged plates to remove grease and other contaminants from the air).
